Sweetie Pies



It's almost Valentine's Day! I don't know about you, but my favorite thing about this holiday is the desserts! Valentine treats are supposed to be sinfully delicious, and while I'm usually all about dark chocolate on February 14, I had the idea to make these little heart-shaped hand pies this year because I happened to have some pie dough in the freezer already. You could definitely use store-bought pie dough for these, but if you want to make pie dough from scratch, try my Grandma's perfect pie crust recipe. After you roll out the dough, use a circular cookie cutter to cut 12 rounds in the dough. Then, use a small heart-shaped cookie cutter to cut a heart in the center of 6 of the circles. These will be your tops. For the filling:

Combine:
2 c. frozen, unsweetened tart red cherries
3/4 c. sugar
1 T. quick-cooking tapioca
1/8 tsp. almond extract

Mix well, and let stand for about an hour, or until they form a juice. (I'm usually too impatient to wait an hour, so I microwave the cherries for about a minute to speed things up.)

Spoon filling onto the center of the six dough circles. Use your finger to brush a little water around the edge of the dough circle. Place the dough circles with hearts cut out of them on top and press to seal the edges. Use the tines of a fork to seal the edges even more. Brush with a little milk, and sprinkle a little sugar on top.

Bake at 375 for about 25 minutes or until the tops are golden and the filling is bubbly. Happy Valentine's Day!
