Hi guys! I've got a great recipe for you today. These simple chicken cheese steak sandwiches are perfect on a night when you don't want to spend a lot of time in the kitchen. I've made them several times, with just some kettle chips and a pickle on the side, and the plates are licked clean. Here's what you need to do:

Chicken Cheese Steaks
2 chicken breasts
1 red or yellow bell paper, sliced
1 small onion, sliced
5-6 slices of provolone cheese, cut into strips
hoagie buns
mayonnaise

Sprinkle the chicken with kosher salt and ground pepper, then cook over medium heat in a little olive oil until browned and cooked through.
Remove the chicken from the pan and let rest. Meanwhile, add the sliced vegetables to the same pan and saute over medium heat, stirring often, until crisp-tender.
While the vegetables are cooking, slice the hoagie buns and spread mayo on them. Then, slice the chicken.
When the vegetables are done, add the chicken back to the pan and stir. Place the provolone cheese on top of the mixture and begin to toss with the chicken and vegetables until everything is coated and the cheese is stringy.
Pile into the hoagie buns and serve immediately.

That's it! The best cheese steak I've ever had (this far West anyway).
